Sweeten Her Day: Delicious Ways to Celebrate Mum with Organic Honey

With Mother’s Day just around the corner on Sunday 15 March, it’s the perfect opportunity to show the special mother figure in your life how much she is appreciated. One of the tastiest ways to do this is by baking something wholesome using pure, organic honey.

Thyme and Lemon Honey Bundt Cake

The gorgeous lemon and thyme paired with Honey Heaven Organic Honeydew Honey in this Bundt cake are a mouthful of early summer! Impactful on the eye and on the tongue

Ingredients:

  • Two fresh lemons (unwaxed)

  • Fresh thyme leaves (small bunch)

  • 250ml greek yoghurt

  • 450g plain flour

  • ¾ tsp baking powder

  • ¾ tsp baking soda

  • 200g soft unsalted butter

  • 240ml or one cup of Honey Heaven Organic Unprocessed Honeydew Honey

  • 3 large eggs

  • 120 to 240 grams of icing sugar (depending on how much icing you like)

Method:

  1. Preheat the oven to 160c

  2. Prep your Bundt tin by coating the inside with soft butter and sprinkling with plain flour.

  3. Zest the two lemons and place to one side. Then squeeze both the lemons and leave the juice to one side.

  4. Place the soft butter into a freestanding mixer or a large bowl and mix until creamy. Add the thyme leaves (about 4 teaspoons) and once creamed, add the grated lemon zest. Mix.

  5. Add the Honey Heaven Organic Unprocessed Honeydew Honey and mix.

  6. Add the eggs one by one while still mixing.

  7. Add the Greek yoghurt and mix until combined.

  8. Add the flour, baking powder, and baking soda and mix until combined.

  9. Add the lemon juice and mix until combined.

  10. Pour the mixture into the prepared Bundt tin; lightly tap the tin to remove as many air bubbles as possible.

  11. Place into oven. After 50 minutes, check if the cake is cooked by inserting a skewer or knife into the centre of the sponge. If the instrument is coated in any wet mixture, return to the oven for 10 mins more, then check again.

  12. Once cooked, remove from oven and allow to cool in the tin for 15 mins, then remove from the tin and allow to cool completely.

  13. Mix the icing sugar with water and drizzle over the Bundt cake. For an extra special touch, add fresh Thyme leaves.

Fudgy Brownies with Honey Heaven Organic Honey with Raw Cacao

Everyone loves a brownie, but these made with Honey Heaven’s organic honey with raw cacao are extra specially rich and moreish!

Makes about 12 brownies

Prep time: 15min · Bake: 20–25min · Cool: 20min

Ingredients

  • 240ml unsweetened applesauce

  • 120ml Honey Heaven Organic Honey with Raw Cacao

  • 115g unsalted butter, melted

  • 2large eggs

  • 1tsp vanilla extract

  • 125g plain (all-purpose) flour

  • 1⁄2 tsp baking powder

  • 1⁄4 tsp salt

  • 90g chocolate chips (optional – dark or milk)

Method

  1. Preheat your oven to 175°C. Grease or line a 23×23cm (9×9 inch) square baking tin with parchment.

  2. I n a large bowl, whisk together the applesauce, Honey Heaven Organic Honey with Raw Cacao, melted butter, eggs, and vanilla until smooth.

  3. In another bowl, sift or whisk together the flour, baking powder, and salt.

  4. Gently fold the dry mix into the wet until just combined—don’t overmix.

  5. Fold in the chocolate chips, if using.

  6. Pour mixture into the prepared tin, smoothing the top. Bake for 20–25minutes, or until a skewer/tester comes out with a few moist crumbs.

  7. Let the brownies cool in the tin for at least 20minutes before slicing into 12 squares.

Honey Brownies with Organic Mushrooms in Honey & Pistachios

Another variation on a brownie, this time made with Honey Heaven’s unique Mushrooms in Honey. This adds a surprisingly earthy chocolatey flavour with all the benefits of seven medicinal mushrooms so surely that extra slice can’t be all bad!


Makes roughly 9 brownies

Ingredients

  • 113g unsweetened baking chocolate, chopped

  • 113g salted butter

  • 240ml Honey Heaven Organic Mushrooms in Honey

  • 2 large eggs

  • 1tsp (5ml) vanilla extract

  • 25g cocoa powder

  • 1⁄2 tsp salt

  • 1⁄4 tsp baking soda

  • 45g all-purpose flour

  • 130g chocolate chips, divided (about 3⁄4 cup)

  • 60g chopped pistachios (around 1⁄4 cup), for topping

Method

  1. Preheat oven to 165°C (325°F). Line or grease a 20×20cm (8×8′′) baking dish.

  2. In a microwave-safe bowl, melt the chopped chocolate and butter in 30-second bursts, stirring until smooth (about 2minutes total).

  3. Stir in the Honey Heaven Organic Mushrooms in Honey until fully combined.

  4. Let the mixture cool slightly, then whisk in the eggs and vanilla until smooth.

  5. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking soda.

  6. Fold the dry mix into the chocolate mixture until just combined. Stir in half the chocolate chips (around 65g).

  7. Spread batter evenly into the prepared pan. Sprinkle remaining chocolate chips and the chopped pistachios across the top. Bake for 30minutes, or until the centre still has a slight jiggle and a toothpick shows moist crumbs.

  8. Let brownies cool at least 30minutes in the pan before slicing 9 squares.
